p.s. have you ever had actual lox (as in, not nova - the stuff that is not smoked, but salted?) it's kind of unbelievable. i am not sure if this is what you were referring to when you said lox. since people tend to use the terms interchangeably.

i find all of these things, if done well, pretty freakin unbelievable.
my mom used to have a smoker and would smoke salmon at home and it was life-changing. also, making your own gravlax, which is totally easy, is amazing.
as per the previous subject - we wanted to come, but we ended up leaving the seder very, very late, and it didn't seem so feasible anymore. next time!
