fun with the canner

For Christmas J bought me a pressure canner. He said he was going to buy me a vest with a battery-operated electric heater in it, but they didn't have any in sizes less than XL so he got the canner instead. Personally, I think I'll get more use out of the canner. ;)

I know. :) I'm just still amused by the fact that you can actually get 5-gallon jugs of canola oil and 50-pound sacks of rice without being a restaurant.

Woo! Canner envy!

We're hot food geeks, but we don't actually care for jalepenos either, SB with an actual dislike and me just neutral. This sounds like a fun thing to do with a canner, though :).

Well, you could use any kind of hot pepper. The recipe actually wanted serranos too, but J doesn't like those so we left them out. You could probably do it with anything from banana to those crazy little Thai peppers if you wanted to.

Technically you don't *need* a canner to make any sort of pickle, just a tall pot and a low rack that fits inside. I just happen to have both kinds of canners now, is all. :) Need a pressure canner to do the stocks, though, it's not safe otherwise.
