Kevin Smith is one of the most religious (Catholic) modern filmmakers I can think of -- apparently he even goes to church immediately before production begins on a movie, to pray for a good production, and immediately before it opens (which didn't pan out too well for Jersey Girl).

Mel Gibson is probably the most religious modern filmmaker, what with the church he built in his back yard. But he's one of those religious wingnuts from whom most Catholics would probably prefer to distance themselves.
