I've heard for cat grooming you have to find someplace that actually specializes with cats. I think the place you used to go to had that...
you should ask you local vet...they might know a place that specialized in cat grooming :D

How weird, they sound so incompetent - but when I think about it, the place where I used to take Bella only did dogs. Cats are super nervous I guess, poor Kitty. Except I had to laugh when you described her usual after-grooming look as being a little grey hotdog. Hee!
