Ideas for a cake?

 My mother's birthday is this Sunday and I'm trying to decide what sort of cake to make for her... (It won't be a Professor Layton cake.)
She doesn't like things that are overly sweet and she's on a diet (all the time it seems) so it needs to be something light.
I'm thinking maybe some sort of honey cinnamon/lemon/ginger angel food cake with cream/ ( Read more... )

Angel food cake sounds deeeelightful! I also know of some cake recipes were you can substitute apple sauce for oil and such. So I'm sure you can find a delicious, low fat alternative. The idea for a lemon or some such glaze instead of icing is a good idea, too! <3

My mom's not a huge fan of icings so that's why I want to use some sort of glaze instead. I have tons of honey available so I want to use honey in some way but what to go with it... lemon? orange? cinnamon? a combination of all three? grapefruit? XD So many possibilities!

I had the most awesome steak with sauteed mushrooms waiting for me when I got home. It was delicious! 6:

If she doesn't like overly sweet, I'd say a light angelfood cake would be a good base to start, then maybe do a honey-cinnamon glaze over top. Or honey-orange or honey-lemon, depending on if she likes citrus-y flavors like that? Maybe you can do a sort of teacake variant. Cinnamon nutmeg anglefood cake, with a ginger-lemon-honey glaze? Or would that be gross?

I OBVIOUSLY DON'T KNOW WHAT I'M TALKING ABOUT.

Also, I tried making that pasta dish again over the weekend (the cream, shallots, mushrooms one) and I threw in a lot more wine, and totally forgot the parsely, added in green onions, and put in too much corn starch. But it actually came out AWESOME and Bo and Gan didn't die! I'm so proud of me <3

She's not really into sweet unless it's honey, which is mainly why I'm going for some sort of honey cake or glaze. She loves citrus. So I think lemon and/or orange would be good. I didn't even think of nutmeg. That would go nicely with cinnamon.

I'm not sure how all those flavors would taste together though. Probably okay.

Hmm... I could do:
Lemon Angel Food Cake + Honey-Cinnamon glaze
Spice Angel Food Cake + Honey-Citrus yogurt sauce
Orange (or Lemon)-Honey Angel Food Cake + Cinnamon-Nutmeg Whipped Cream
etc.

Oh! That's good it turned out well and not full of fail! :D Did you use actual red wine instead of the lame cooking wine? I can't find the magazine I originally found that recipe in. I'm SURE something was missing. Or it may have been the wine.

I actually just used the same cooking wine, just... more of it. But red would likely be better, I just didn't feel like going out to get it at the time so I worked with what I had :D
