That's the beauty of deep frying...there's no getting around the fact that it involves a lot of oil, but done properly, it gives you a nice crispy outside and a very moist, juicy interior. Since you're applying heat from all sides at once, it just drives the moisture inwards (from whence it returns after you take the food out and let it rest a few minutes), so you don't lose any of it the way you might with grilling or pan-frying.
