That's so odd. I find parsnips taste very sweet. I don't get any radish-like flavor from them at all. They're more like carrots.

1) Are you sure those were parsnips?

2) Did you peel them?

Because parsnips are indeed sweet and mild.

That's what I'd thought, that they were sweet. My parsnip-eating experiences have been few and farther between. I definitely peeled them with a vegetable peeler like you do carrots.

Maybe they were something else pretending to be parsnips...they LOOKED like parsnips...

I had two big ones. I'd rather buy smaller ones than reject them out of hand...I'll try smaller ones 8)

I don't know if it's the same with parsnips, but with turnips, soaking or cooking them somewhat beforehand helps with the end result you likely want.

I've been meaning to try parboiling turnips & draining off the water to see if that helps cut the sharpness of their flavor.

It does :D I've made http://www.medievalcookery.com/recipes/pottage.html for a couple of dayboards at large events; that recipe is where I first saw to do that, and it really helped. The turnip pottage went faster than the meat soups and stews!

Mashed potatoes and parsnips are yummy. The parsnip flavor is thinned by the potato and enhances it nicely.
