Quick thoughts: 1. You're totally right! The first-time fics would all be irrelevant and they're my fave so I wouldn't like that. Especially since I like angsty ones. 2. What about QaF? and Oz? It must work to have canon slash to some extent coz those are/were pretty prolific fandoms. 3. I read some Jack/Sam het (SG1) and was able to enjoy it seperately from the show where they made a total mess of the relationship with all the 'will they or won't they' crap to the point where the ridiculousness of it detracted from the show. They should've just gone there or not w/o all the maybe crap.
I've long said that what attracts me to fandom is the characters and the 'what ifs'. Exploring the way couples come together and fall apart. If the canon has the couple, I'm just not that interested. This has been hammered home to me by my (really really late) watching of Total Eclipse. I honestly really adore Leo's character. I detested Thewlis the way I was supposed to. I (in the minority here, I know) liked the movie. My interest in reading/writing/finding fanfic for them is almost non-existant. The movie covered it. Sure there are holes to be filled, but for the most part - It's already there. It's in the canon. I don't need to try to fill it in.
I think it does depend hugely on the fandom, and to what extent the "couple" would actually be the focus of the show, and therefore how much we would actually see of their relationship.
Unlike nakeisha, I wouldn't be particularly keen on Gibbs/Ducky becoming canon (or any more canon than it is already *cough cough*), because for the star of the show to suddenly have a gay relationship couldn't help but become a huge plot point and we would have to see a lot of it onscreen and have episodes devoted to it. I'd be against this, (a) because NCIS is not supposed to be a show overwhelmed by anyone's romantic relationships, and (b) because it would lose some of the mystery.
However...
In Torchwood, Jack/Ianto is now canon. Except we know absolutely nothing about their relationship apart from strange hints about stopwatches. Totally brilliant. More fics than ever are being written precisely because there's that mystery. No one has a clue what's going on, when their relationship started, what their motives are, what the heck they're

Seriously, that's wonderful: you can still explore the background and deep stuff in fic - or simply stick to the porn (because I guess you don't get to see that either, so there are still many questions left unanswered...)

The main reason that I feel trepidation about any of my favorite couples (het or slash, really, anymore) becoming canon is that it's so likely to be badly done. TV writers have decided that it's not possible to write interesting relationships once they've resolved the UST (because adult relationships are, like, so boring), so I would expect stupid fake obstacles and other devices to tear the couple apart so that they can have tension again. I want better for my boys than that, quite frankly.
Probably the amount of romance fiction would decrease if the couple became canon, which I think just makes sense. cereta has talked about the two basic reasons to read/write fanfic: to get more of what you like from the source, and to get what the source isn't giving you. Right now, slashers are bound to be more of the second sort -- we'd get awfully frustrated if we weren't. And if the source was giving us our guys together, maybe we'd move on to one that wasn't. But who knows? There are lots of people who like to ship canon couples, so maybe

"Fuck, yes!" to what you said about romance-writing on TV. Nothing more to add, most of it is ridiculous. And yes, I'd hate to see that happening to my boys... *shudders*
But, just for arguments sake, let's say your fav couple gets together. In a way you absolutely adore. The whole show doesn't suddenly turn into being just about the two, they have their problems, they have good times, they kiss - however you'd like it to be - would you stick to it? Or rather, would you keep on writing? Writing about the stuff you still don't get to see (I'm not talking about porn here - well, not exclusively, anyway - I just mean that you don't get to see the life of the characters 24/7, so there'd still be a lot they'd do one could write about)? So, would you, personally make the shift from "getting what the source isn't giving you" to "getting more of what you like from the source"?

I might not write for that pairing, but I don't write very much anyway. :) I'd probably still read them, but only the really good stuff -- I would need to read fic that wasn't quite as good just to get my fix, you know?
