I am making turkey roulade (turkey wrapped around wild mushroom stuffing, then with bacon wrapped around the outside the turkey) for dinner tonight. Thanks, Emeril! (he seems to be a regular guest recipe-giver in Everyday Food these days).

I would just pick up a box and mail it to Texas, so you have it there and you don't have to worry about it getting crushed in your suitcase.
