Quiche

I never have been a huge egg fan, but since I've become a runner, I've realized that my body does really well with them. In Mexico, we would have some form of eggs/beans/tortillas most mornings, and I always felt full and energetic well into the afternoon. yum, that looks delicious! I'll have to try that (though I think I'm going to have to do a pre-made crust...making a crust looks a bit too much for me). I also eat a lot of eggs. Frittatas are another good way to use them up.

The crust I used was totally pre-made! I don't make crusts too often...I know they are "easy" but I'd be better off making a whole bunch one day and putting them in the freezer to store than making them on demand!

I don't think I've ever made a frittata!

I make a lazy quiche/frittata with mixed eggs, chopped frozen veggies and cupcake tins. The eggs stick like the dickens to the tins, though.

Do you microwave? I break an eggs into a small corelle cup /bowl and scramble it up, then micro for 50 seconds. The texture is a bit strange, but if you are mixing in other breakfast or salad fixins, it's ok.

I make two in the morning and cut them up with my spinach for lunch. Easy and healthy.
