Oh... and stuffed tomatoes... just cut the top of(like you would a pumpkin), hollow them out, fill them with cottage cheese and herbs and then replace the tops and bake them(or not) in the oven until they soften.
It gets melty, not SUPER melty like regular cheese, but it softens up and is yummy(I think anyway) and the tomato shell keeps it together. You can also just not bake them, and eat the cottage cheese cold, but the tomato skin(assuming you're going to eat it and not just use it as a bowl - which you can) isn't particularly tender.
you could make salsa. lol you know i have no recipes for anything but mac n cheese and even then i had to steal your idea (putting black pepper and garlic salt in it) LOL
