OK, well I am going to have an abundance of tomatoes.  Have any recipes you care to share with me and my fresh off the vine tomatoes???

Tomato Sandwiches!!!!!! So yummy, and like, almost no calories/fat/etc...

I would eat those until I exploded.

Oh... and stuffed tomatoes... just cut the top of(like you would a pumpkin), hollow them out, fill them with cottage cheese and herbs and then replace the tops and bake them(or not) in the oven until they soften.

baked cottage cheese? Does that hold up well in the oven? Not being snarky, just always ate it ice cold with pepper.

It gets melty, not SUPER melty like regular cheese, but it softens up and is yummy(I think anyway) and the tomato shell keeps it together.
You can also just not bake them, and eat the cottage cheese cold, but the tomato skin(assuming you're going to eat it and not just use it as a bowl - which you can) isn't particularly tender.

you could make salsa. lol you know i have no recipes for anything but mac n cheese and even then i had to steal your idea (putting black pepper and garlic salt in it) LOL

I eat tomatoes as is with salt on them mmmm save me a few. :D
