This tabbouleh recipe sounds interesting. It's just so rare that I buy watermelon, I'm not sure if I'll ever get around to making it...
watermelon tabbouleh- 1¼ c water;
- coarse salt;
- ¾ c bulgur;
- 8oz peeled & coarsely chopped watermelon;
- ⅔ c coarsely chopped flat leaf parsley;
- 2 thinly cut scallions;
- 1 tbsp + 1tsp extra virgin olive oil;
- 2 tsp lemon
