Attention foodies/good cooks

I'm catering for 25 adults on Sunday and planning to start cooking tomorrow evening.

Menu is:

Beef stroganoff

Chicken curry

Rice

Baby potatoes

Egg Mayonnaise

Coleslaw

French bread sticks cut up

I'm going to use Rick Stein's Stroganoff recipe...........here
How should I increase the quanities to cater for say 15 people.

Unless you have ideal containers and fridge space, I'd do the eggs Sunday. I've done deviled eggs en masse before, and it takes up the whole fridge once you halve them. Plus they tend to "sweat" a little and end up in a pool of liquid.

For the steak, I'd do it in 4 separate batches, rather than one large batch. Maybe precook the mushrooms & onions, and separately precook the steak, leaving it more underdone than you want. Do that up Saturday night, then pick up with Step 10 (using about 1/4 of the ingredients at a time) on Sunday. You'll need to cook a bit longer to heat through, obviously.

You could certainly hard boil the eggs today, but I would wait until Sunday to peel them and put on the mayonnaise.

When increasing quantities, I've been told that the more people you cater for, the less they eat per person, so double or quadruple the quantities that you would normally cook for your family and then take a little off each amount!

Another option is buns and meat slices at the sideofthe tablefor those that dont' want the beef?I think most would though because it looks yummy!

When I had thomas' party last May we BBQed steaks and I made potato and tossed salads.Hotdogs for picky kids. :) We had enough steak for the week. That one my family which was 9/15 came and for my inlaws 2/4 came,but we're 7hours away. I don't know that I'll do the smae for Andrew, I might wait until we go to the "cottage" and have the party there, hhe then we'll get 15/15 for my side of the family? I guess we'll see, Sorry i'm hijacking here... :)

OK so the meal looks great and I hope it all goes well. Xing fingers that all goes well and that your little communicant follows all he needs to do right down to the letter :)

BTW again it's me, can I come?I promise not to bring Darren, he's deathly allergic to mushrooms, so I rarely get to eat them.
