Attempting to Tart Things Up

I love food! I love experiencing new flavors. I love experimenting with recipes. I love cooking for friends and family. Whenever a situation has become too overwhelming for me, I usually retreat to the kitchen, pull out a cookbook, and try a new recipe. I wanted to use my mini muffin pan, but I was having pressing issues, so I switched to a regular muffin pan.

Before you totally give up on the cream cheese idea, I'd try it with the fresh juice. Bottled/non-fresh juice is a totally different animal flavor-wise. The cream cheese filling might be really good with fresh...

I was kind of thinking that the store-bought lemon juice might have changed the flavor. And, I think another issue I had was I didn't let the curd completely cool before mixing it with the cream cheese. I think that's why it had the sour taste, and there wasn't a full lemon flavor due to a diluted concentration.

I have purchased a jar of lemon curd from the store that I am going to taste. If I like the taste of that, i am going to attempt the curd again (making it properly and without shortcuts) and just use that. I wasn't keen on the cream cheese portion to begin with.
