Its to do with the ratios of the average height of dropping (usually plate carrying height or table height) and the average weight and size of slices of bread.
It just so happens the ratio is perfect for slice of average bread to flip once before it hits the floor when dropped from the average height, thus landing butter side down.
However if you, drastically, change the height or the toast size the ratio changes allowing a different number of flips, so if you got the size/weight:height ratio right you could get it that a falling piece of toast would flip twice (or 4, 6, 8, 10 ....) times and thus would land butter side up.
There you go, now answer me this... who has too much time on her hands?
