I haven't felt very well for days.

Today I tried to make myself feel better by making the worlds most delicious and comforting breakfast: German Oven Pancakes! and Bacon!

Look!

Here's what you do:
Prepare your ingredients. This is my new favorite thing, having everything all set out before I begin.
Preheat your oven to 450 degrees fahrenheit.
Lightly beat 3 eggs in mixing bowl.
Sift 1/2 cup of flour.
Melt 2 Tbs. of butter.
Pour 1/2 c. of milk.
Have some salt ready.
Butter a 9" cast iron skillet.
Take out your hand mixer and plug the beaters into it, then plug into wall. First, make sure it's off. I've frequently plugged it in when it's turned on, this causes panic.
Now, take that mixing bowl and get it all ready to do things to. Measure 1/4 cup of the sifted flour, doing that thing with the butter knife that your grandmother taught you. This is science after all and we must be precise. Turn on the beater and stick into the eggs in the mixing bowl. Slowly sprinkle the flour into the eggs, beating "gently" with your handy mixer. keep doing this, then do it with another 1/4 cup. The thing about the 1/4 cups is that it's easier for me to slowly mix it and not accidentally dump all 1/2 of a cup at once. Make sure you get all the flour and mix for a few seconds until it's all creamy and looks delicious even though it's just raw eggs and flour. Put away your mixer, you won't need it anymore. Now, take your milk and slowly pour it in, using a fork or whisk to mix it in gently. I mean gently. Don't whip it up like you're angry or anything. Then, slowly add the butter making sure not to get it all cold and solid again. Just pour slowly and keep mixing and you should be fine. Sprinkle a little salt in, then stir and again "gently" pour into the cast iron skillet. Put into your hot, hot oven for 20 minutes. Take out as soon as your cell phone alarm goes off and eat right away.

Here's how you should eat it:
sprinkle powdered sugar on it. make a special syrup* for this motha and spoon some of the special syrup on, add more powdered sugar, and chow into it.

*Here's our special syrup:
1/4 cup of lemon juice, powdered sugar, melted butter. Mix it all up and keep it handy to spoon over your fancy oven pancake.
