I signed up for one of those Wilton cake decorating classes the other day. Had my first class last night. WOW! I knew it wouldn't be easy, but I had no idea just how involved it all is! I also wished I hadn’t taken the class....because I now know just what all that lovely delicious frosting most grocery stores use is made out of...the 2 major ( Read more... )

*chuckles* That's what my mom has always made her frosting from: Crisco and confectioner sugar, plus some milk. I try not to think about it, and technically, it's not actually lard. ;) I forget what it is, but it's probably high in trans fat. =D

i doubt that they'll kick you out of the class if you can't make a perfect rose. or at least i hope not. the good thing is that you're trying. that's really interesting about the 2 main ingrediants. maybe that's why i don't do well w/ store iceing. interesting.

If sugar or fat is a migraine trigger for you then certainly stay away from frosting. A recipe that yields 3 cups contain 1 cup of shortening and 1lb of confectioner sugar (yes one whole pound of sugar!) it also has a little bit of milk or water, what ever flavoring (mostly a teaspoon of extract like butter extract or almond extract) and some frostings contain meringue powder which is basically powder egg whites and cornstarch. Thankfully none of those are migraine triggers for me. Right now my triggers seem to be hormones, allergies, caffeine, over/under sleeping, and stress. Sorry I haven't been keeping up with LJ, but I hope you are doing better.

i'm still on and off again, but starting to be more stable which is really nice. i've found that fructose (sugar from fruit) is much easier for me to handle than the standard sucrose. i don't know why.
you're lucky that you don't have too many triggers. it can get really complicated.

I've taken this a similar class series, too. At first it's like writing left handed but you'll catch on quicker than you think. My favorite cake in the one that looks like flowers in a basket. The basket-weave is very impressive looking and pretty easy to master.

I'm not very creative or artsy at all, but the limited creativity I do have was quite stimulated.

I don't think we are going to do the basket weave with this course, I think it would be in the next one. (The Wilton classes that are offered are 3 courses 4 classes in each course. So far I have only singed up for the first one). What I seem to have problems with is the pressure control, either I squeeze too hard or not hard enough. I also feel like I have problems making the right consistency with the frosting. When the instructor was passing around the different consistency of frosting in class everyone was nodding and saying how they could tell--I was like it all looks/feels the same to me.... I hope I get the hang of it. I would love to be able to do all those fancy looking boarders and flowers.
