There are a lot of different ways to make Kedgeree. This is how I make mine. Makes two generous servings.
Ingredients
2 cups of long grain rice
Enough vegetable stock to cook it with
One large onion, chopped
1 cup peas
About four tbsp butter
2 smoked haddock fillets
2 eggs
For seasoning: 2 chopped garlic cloves or 2tsp garlic paste, 3tsp turmeric, 2tsp garma masala, 1 tsp coriander, 1tsp curry powder, generous sprinkle black pepper
Method
Put all ingredients except for haddock and eggs in a rice cooker if you have one.
On the hob: cook rice as per packet instructions, using stock instead of water, adding all ingredients exept for haddock and eggs
While rice is cooking, cook haddock to your liking
Boil eggs until hard boiled, then leave in pan of cold water so they are comfortable to peel
To serve
Flake cooked fish, chop boiled eggs,and mix throuh rice mixture. Alternatively, halve or quarter the eggs and serve with the fish piled atop the rice, and the eggs arranged round the side. Serve with lemon wedges, and fresh parsley or coriander if available.
Variations
Vary the seasoning to your liking. You can take out some curry spices and make it more herby instead if you prefer. You can also use salmon, white fish, or a mixture of different fish. If you prefer, you can poach the fish. I used to buy pre-chopped haddock, cod and salmon mix and throw it in the rice cooker with the rice.
