It supposed to be one of the more 'low impact' forms of exercise, so sounds like it could be good. It's my favourite form of exercise :)

Having done this exact thing last year....

Yes, do it. Be careful. At first, see if you can use a buoy and work on pulling only. You'll still be stretching out that ankle and putting light work on it. Go easy on the kicking.

Crawl is better for it than breaststroke. Breaststroke is really hard on a sprain. If you can swim trudgeon, you might try keeping the injured ankle on the lower part of the scissor kick to keep it from coming out of the water. Keep your feet from coming out of the water if you can help it, the repeated impact on the surface is worse than the resistance under the water. Easy flutter kicking should be okay if you can keep from breaking that surface too much.

I wouldn't be suggesting any butterfly ;)
