2. Green & Black's dark chocolate with soft mint center
3. Seeds of Change Bayano dark chocolate with cacao nibs and cinnamon oil - a new favorite (I think cinnamon is now my favorite addition to chocolate) 70%

What do the percentages mean?

It's the percentage of cocoa in each bar. The more cocoa, the richer (and sometimes more bitter) the chocolate is. I think 65% is about the best b/c it balances richness and smoothness, but sometimes it's fun to get something that just has a shitload of cocoa in it. :)
