For me, it all depends on the character I am playing.
For Dark Elf, Bosmer, and Mage characters I tend to use Glass armor for the aformentioned reasons (light, decent protection, can hold a fair amount of enchantment).
For Nords, I tend to use the Nordic Armor (natually), and the Nordic Mail stuff from Bloodmoon expansion is some of the best heavy armor in the game and can hold some pretty good enchantment.
For most Heavy fighters and Redguards, I use Ebony or Admantium.
I rarely use Daedric armor except the shields (which hold an insane amount of enchantment) sine like you said, its REALLY heavy, but compared to Ebony and Nordic Mail, its not hardly any better.
Of course the best armor of all to get is all the artifact items :)
I like to stockpile money and then get constant effect bound armor.
... glass has the best stats overall, but some of the other sets look cooler. :V I'm fond of Netch Leather's looks to be honest. Bonemold isn't bad either.
I tend to hoard things mercilessly, and if I had to choose just by the way it looked, the armor on the High Ordinators and the generic Indoril armor would be the cream on my latte.

That's one thing that I love about Morrowind. The armor comes in so many parts that even though players are given the same things, the characters can be fairly different from each other. (Not to mention clothes! But I digress. XD)
If I'm not doing the lolz I have 1004905456 strength cheat, then I'd probably have to say that Daedric Armor is the best. It has the best enchant ability and also the best protection. The heaviness is something you kind of have to take along for the ride. Though, since I often play Bretons and get the Cuirass of the Savior's Hide, I can wear the Boots of Blinding Speed, and be completely immune to the darkness enchantment on it, which helps a lot.
Yeah glass is the best choice for beginning I think. But for my char I prefer glass cuirass, gauntlets and pauldrons - and ebony gaiters & Apostle's boots, almost all enchanted by myself.
