I get in the mood for tamagoyaki a lot, but at some point I began to worry about the cholesterol/caloric content when I could regularly, easily put back 2~4 eggs worth on my own. 8D

Nom~ I LOVE egg whites in the carton though, lol. They actually taste better than a regular egg to me. I like to scramble them with liberal amounts of black pepper.
Honestly, I've come to be the same way! I can't eat cheese anymore though, so I've been thinking "hm, what else can I do now?" Pepper's good, or I've got this garlic/bell pepper mix I use, too. :9
Dude it's soooo easy to make. The only thing I think you wouldn't already have around just because would be the mirin. Seriously, I swipe extra soy packets at the Chinese take-out place, so I got that on lock. XD If you can swing for the usukuchi stuff it's better imo, but the regular stuff is just fine because it's so little . . Japs are just purists, they don't want even their egg to be too dark. :|
The other thing that's cool is that even if you fuck it up appearance-wise somehow, it doesn't really taste bad. :D Eggs are good for you, too. MAKE SOOOOOOOOME.
Seriously though, Jesus, come eat some of my fucking food. D: Thanks to my body!fail, I keep having to throw things away. Help me not waste. ;o;
i don´t know whether you read this on my journal but i´ve been told i have horrible cholesterol a few months ago so i stayed away from lovely tamagoyaki... now i guess, i´ll just try it without the yolk. i wish we had stuff like egg beaters stuff here but no, germans don´t get good, useful stuff like that. or i can´t believe it´s not butter spray...;_;

I hadn't read that, but I'm sorry to hear it now just the same. >< Eggs are depressing, in that case, because they're so cheap/otherwise healthy. They're one of the few things I can still eat, actually. :( I think products like Egg Beaters and other Egg Whites only/liquid egg products have been born out of necessity here. :| I mean America's the walking sitting heart attack, right? Nevertheless, I enjoy this convenience product and I'm sorry to hear you don't have such a thing there! While I do enjoy separating egg from yolk, it sucks to waste-- both time and yolk. Here it says they use the yolks they remove for industrial baking and the like...for better or for worse. XD But! I swear this works so well, so if this can be a fix for you and help keep the wonder food that is tamagoyaki in your life, then I am very happy indeed! ;3;/

i tried it and it was great. i expected it to taste a bit different but it tasted just like my usual tamagoyaki. yay. it did behave differently in the pan though. did you get that too?
and i love eggs. i love meat and fried things and everything i´m supposed to stay away from. but in the end i think my diet wasn´t that bad so far, i love ll kinds of things that are supposed to keep cholesterol low, too: apples, oatmeal, tofu... *sigh* XDD so convenient. germans just refuse to use stuff that looks to... processed. strange, right? if it doesn´t look like it, it´s okay, though. weirdos.
*shakes fist at customs* even if my i-can´t-believe-it´s-not-butter explodes on the plane, so what? ;_;
Another thing I love about it is how well it keeps. Normally I'd eat some a couple hours within making it . . the rest? Into a bento for tomorrow's lunch. :D

Mmm. Tamagoyaki! That looks tasty. I haven't used an egg pan for this since I moved away from my parents' (my mother had one), but a good large pan works well too, as you said. I do have a bamboo sushi mat though. I'm still trying to figure out moisture issues in my tamagoyaki, as I always end up with a very moist omelet. That makes folding a little harder, and I think it's also why I don't get a nearly as well-rolled dish.
Anyway, tasty, tasty tamagoyaki! Now I want to make some again too!
Hm, you know you raise a good point. I definitely do enjoy a slightly dryer egg, but it's difficult for me to pin-point just what I might have done to accomplish that. Definitely my father's daughter though; never can manage the exact same thing twice!
I'm so glad everyone seems to want it. I love chilled foods in the summer, but I'll eat tamagoyaki whenever. :9 Making up some hiyashi-chuuka for lunch though, speaking of chilled foods. :D
I honestly think I may just have added too much liquid to my egg mix. My variation to the omelet recipe is to add a very small bit of rehydrated instant dashi powder for a little seafood action. :)
(Side note: Isn't Just Hungry awesome? I still faithfully follow her basic sushi rice recipe, because it's perfect for the stove top and rice cooker.)
Great thing about tamagoyaki is that it can be refrigerated for use over a few days. I like making up a few plastic containers of side dishes, so I can eat them over a week on top of rice. My favourite lazy breakfast is chazuke with lots of pickles (homemade kimchee!)
