Two large yellow onions, preferably Vidalia
One can cream of mushroom soup
One can cream of chicken soup
One bag of Lay's Potato Chips (not ridiculously large bag)
One sixteen ounce block of medium or sharp cheddar cheese, your preference

Slice onions into rings and separate. Place in 9x14 casserole dish. Add cans of COM and COC soup and 1/3 can of water (you can also use milk, for a slightly richer mixture) to separate saucepan. Blend and warm over low heat. Do not bring to a boil. Pour mixture into casserole dish. Take potato chips and crush in bag, pour evenly over onion/soup mixture. Grate entire block of cheese and layer evenly over crushed potato chip layer. Bake at 375 degrees for 70 minutes. Allow 20 minutes to set. Enjoy!

Outstanding! Well, that's one down at least. I may try that tomorrow since I'm off. I'll make it 'straight up' the first time, but don't be surprised if I show up at a function with a tweaked version. I like playing around with ingredients and/or quantities. E.g. my chili, with a little cocoa powder to enhance the spice of the cumin worked great; the chili with bleu cheese...not so much. :(

ADDENDUM: OK, the first batch of casserole was 99% successful. What would have made it 100%? Remembering to spray the dish with Pam before baking. Baked-on edges notwithstanding, the casserole turned out great, IMHO, with leftovers for lunch tomorrow. This will make a nice addition to the arsenal of covered dishes for the family reunion dinners.

Glad it turned out ok. I've never made it, as I'm not a fan. But I've seen it made more than enough times not to know the recipe. Sorry about the clean-up problems.
