I'll ask Tourogal to answer your question, too, as she is a professional baker and probably has a better opinion than mine.
I'll look for the recipe on-line, but in case I don't find it, does it have eggs in it? I don't have any luck freezing things with eggs in it b/c when it defrosts water separates. So I would use a potato batter instead of an egg batter to hold then together and reheat a minimum of 2o minutes at 450 straight from the freezer to reheat. Or try these baby cakes ones, they are delicious.
