I got round to digging a few of the parsnips I had planned to use over New Year today. The plan was waylaid by a neighbour giving us some of hers. These were a lot smaller and digging them was not easy, the earth is damp and hard to lift and several of them snapped off in the ground.
Currently they are finely chopped and simmering (almost steaming) in a saucepan. Likely I'll make soup with them as they were not really large enough to roast.
Has your chard from last year died off? Mine is still alive, despite snow a while back.

Most of the herbs are still going strong, one of the day lilies is already back and the walking onions are thriving, though.
A new batch of chard's going in within the next week or two...
