Delicata Squash.
They are long, yellow, winter squashes and they taste kind of like sweet corn. Just poke holes, roast until the outside is squishy, cool a bit, scoop out/discard the seeds and then the flesh. I either mix in a sliver of butter and some chicken stock or just eat it plain. It's my new mashed potato substitute (and I LOVE my mashed taters)
