Have you tried adding coconut to the filling? Floats to the top during baking to make a brown, crunchy crust on top.

(did you see my earlier post about how much I love warm lemon bars?)

I think coconut would be FAB in this recipe, although if my Pops were the intended target of the goodies, I'd have to pass on it, 'cause he HATES coconut. I keep thinking there should be cream cheese in this somehow, too.

No, I didn't see your earlier post about warm lemon bars, but I promise I'll make these for you if you ever visit!
