Making gluten-free gumbo is tricky. Using gluten-free "flour" is not resulting in a roux worth bragging on. And now I have at couple of gallons of Gumbo Meh to work through. Stupid gluten-free stuff. It worked ok last time I used it. ::grumble::. All that andouille and hand-shredded chicken and chopped bacon and hand-peeled shrimp and pounds
