Making gluten-free gumbo is tricky. Using gluten-free "flour" is not resulting in a roux worth bragging on. And now I have at couple of gallons of Gumbo Meh to work through. Stupid gluten-free stuff. You can get yourself some filé powder to have with your gumbo as a condiment, that'll help thicken it up.
