The hardest part will be making an interface -- anything actually involving screens would be expensive and way less cool and slow.

I can imagine a fast simple interface being something like a potentiometer that lets you toggle between several predefined job titles, and a button for printing out a final card with said job title.

What I need to learn more about is printer tech and what actually exists and is small enough to fit in an oversized pocket...

Well I mean the simplest thing to retrofit that seems the right size and does the right job are label makers. Just a quick google search reveals quite a few models that seem to be about DS sized for under 100 bucks. That's not even getting into weird stuff like this

Altoid tin sized is optomistic, it's assuming that a lot of the space in there is taken up for label tape reels or electronic components I wouldn't be using. But handheld is pretty readily available.
