I decided today that I'm going to make brownie bites for my faculty and staff for Valentine's this year. Last year it was chocolate covered strawberries and holy shiiiiiiiii that took too long. THIS YEAR, cakey bites of joy drizzled in white chocolate if I can get enough white chocolate. And regular chocolate. SOMETHING, IDK.
• 24 Servings (7 to 8 batches necessary)
• Prep 15 min (plus 2 hour chilling)
• Bake 50 min
Ingredients:
• 2 sticks (8 ounces) unsalted butter (buy 8 boxes)
• 8 ounces unsweetened chocolate, cut into small pieces (64 ounces)
• 2-1/4 cups sugar (18 cups)
• 4 large eggs, at room temperature (32 eggs)
• 1 teaspoon pure vanilla extract
• 1 cup flour (8 cups)
• ½ teaspoon salt
• 4 ounces chocolate chips (32 ounces)
• 1/3 cup canned unsweetened coconut milk (3 cups milk substitution)
• white chocolate for drizzling
Directions:
1. Preheat the oven to 350°. Line an 8-inch square baking pan with enough foil to let flaps hang over two sides; grease the foil.
2. In a double boiler, melt together the butter and unsweetened chocolate, stirring occasionally. Let cool slightly, then beat in the sugar, eggs and vanilla with a wooden spoon until glossy. Stir in the flour and salt. Spread the batter evenly in the prepared pan and bake until the top cracks and a toothpick inserted into the center comes out moist, about 50 minutes. Let cool.
3. Meanwhile, place the chocolate chips in a medium bowl. In a small saucepan, bring the coconut milk to a simmer. Pour the coconut milk over the chocolate chips and let stand for 5 minutes, then whisk until smooth. Pour the warm glaze over the cooled brownies and tilt the pan to coat evenly. Refrigerate until the glaze is set, about 2 hours. Using the foil flaps, gently remove the chilled brownies from the pan and cut into 1-inch squares. Decorate the Brownie Bites by drizzling white chocolate over.
Also, I just tried to log into LJ somewhere else and I got the strangest welcome page ever. Instead of opening to www.livejournal.com, I opened to www.livejournal.com as a blank page with nothing but an Arashi icon on it. It's a nice Arashi icon. But wtf, srsly. That was weird.
Bought all the stuff I needed to get my house in order for guests and the party this weekend. HOPEFULLY I CAN CLEAN IT UP ENOUGH FOR WHEN PEOPLE SHOW UP. Crickey, I am the world's worst cleaner. Ever. I'm a packrat. This tells you how doomed I am.

1. Buy boxes for gifts and extra cups/plates at Seriya
2. Start baking brownies and wash/dry the strawberries - leave strawberries overnight to ensure complete drying
3. Clean house in-between (bedroom, living room)
4. Set the futon in the second room
Thursday
1. Finish brownies
2. Dip strawberries
3. Pack gift boxes and regular brownies for Valentine's at work
4. Dinner with Amy 630PM
5. Buy loaves of bread for Saturday while you're out
Friday
1. Take in V-Day gifts for teachers
2. Review session after school
3. Finish cleaning, prepare rooms for guests, lay carpet down, put unnecessary furniture in the front room, put the leg caps on the stools for later, clean bathroom, kitchen
4. Buy anything you need at Seriya that you forgot
5. Cut and prepare bruschetta, donuts, mikan
Saturday
1. Wake up early (before 8AM, preferrably 700 to 730)
2. Cut and prepare the chocolate
3. Set the tables
4. Get dressed and ready
5. Buy anything extra you inevitably forgot on Friday
6. Don't forget to use the bloody apron you bought so you don't f*ck up your clothes this time. 8(
7. PROFIT FROM ONE MONTH'S WORTH OF WORK AND PLANNING.
