My cousin just had his spleen removed.
The spleen basically develops antibodies to help you fight viral infections. In his case it was making his body attack his own red blood cells.
You can live without it, but you end up with quite a compromised immune system, and you usually need to take drugs long term to help replace it.

The pancreas I'm not so sure about.

Oh, and eeeeeeeeeeeeeeeeeeeeeeeeeeeee! So shiny!

Hmm, thanks. Doesn't sound so good. I guess if there's no choice though, at least we have drugs to help..
