Yes, I think that might be the way to go, although I often get a bit confused looking at the tofu on the shelf - it's rarely labelled the same way as the recipes (although I haven't looked that hard really). Purelands I will keep an eye out for, I know I've tried marinating tofu before and had it disintegrate.

Yeah a lot of the soy fake products are awful...the only ones that I like are the Sanitarium Not Burgers....they kinda taste like chicken nuggets...but then, I had also gone a long long time without eating meat or any fake replacement products when I tried them, so they might taste a little odd to the meat-eating palate. But the rest I leave where it is.

Tofu is a funny thing. I cant remember the brand of the one that I use, but its in a white packet, with green writing and has the word Organic in the title. The other trick (other than marinating it) is to make sure that you press it for awhile...I usually put a wad of paper towels on the bench, and then lay out the tofu (already cut into whatever size pieces I want), then a bit more paper towel on top, and then a plate on top of that. Sometimes with a jug of water on top of that depending on the size of the pieces. This obviously pushes out all of the water, allowing the tofu to soak up the marinade.
