Experimental Kitchen: Eggs and Tomatoes

This isn't that experimental, because eggs and tomatoes are sort of a classic Chinese dish. But it's really, really easy, has very little effort, and I didn't have enough ingredients to stick to any one recipe, so I just went with what I had ( Read more... )

This sounds really good (and I don't even like tomatoes, not full-sized ones anyway). Have you ever experimented with roasting (or even broiling) tomatoes? I could see pre-cooked tomatoes making this even better.

I have not! I've heard good things about it, but haven't done it. Usually, I don't really buy tomatoes at all, because I guess I must not like them that much. Now I have quite a few, and they'll go bad soon enough, I'm sure, so I'll consider roasting them!

Even just sauteing them a bit does wonders for the flavor. For a while there, I was tossing roasted or sauteed grape tomatoes on every pasta dish I made. :)
