Rhubarb, Asparagus and Fiddleheads Oh My!!

Spring at St Lawrence is a wonderful thing. Some of the farmers had stacks of asparagus more than two feet high. I thought the rhubarb might be be imported until I saw my neighbor cutting some in hr side garden on my way out yesterday. The fiddleheads were not an outrageous price ( Read more... )

Yes to rhubarb. We have a few patches of it and some of the stalks are already large.

I love to stir-fry things, but have never figured out how to do fish without making it into a mess.

Maybe one pan cooking is a better description. Basically I start a saute a bit of oil in a pan and half cook 2 six oz salmon filets and set aside. Add half a red onion sliced 3 cloves of smashed garlic and one diced granny smith apple and 1 tsp or 2 of ras el hanout when starting to brown. Add in 1 large bunch of asparagus in 2 inch sections and the salmon 1 tbsp mango chutney mixed with a tbsp or 2 of water cook until salmon and veggies are done. Pepper flakes to taste. I don't bother with salt.
