Amazing, Aileen actually prefers Daddy's Mac & Cheese from scratch to Annie's Purple box.

This time I didn't use any sharp cheeses, just mild cheddar for body, cream cheese for smoothness, and a healthy shot of chili powder and dried mustard to give it some kick. Base was a blond roux.

Sometime, try making yours with a sharper cheddar then adding a little touch of cayenne and a dash of nutmeg. No, really. Its'delicious.

Yes, it is I agree with your formula, done it before. The question is how sharp to go. Kraft 'sharp' or Cabbots 'Truck Driver Sharp'

I tend to go toward the Cabot Hunter's sharp because I feel like it can stand up to the spike of the cayenne and the earthiness of the nutmeg.
