Mint Cookies

Everyone has a chocolate chip cookie recipe but not everyone has a mint chip cookie one!

Makes: 6 dozen
Prep Time: 15 minutes
Cook Time: 10 minutes
Ready In: 25 minutes
Servings: 72

INGREDIENTS:

* 2 1/2 cups all-purpose flour
* 1 tsp baking soda
* 1 tsp salt
* 1 cup butter, soften
* 1 cup light brown sugar, lightly packed
* 1/2 cup granulated sugar
* 2 large egg
* 2 tsp mint extract
* 2 tsp vanilla
* 2 cup mint chips (*Guittard brand is what I use*)
* 1 cup walnuts, chopped (optional)

DIRECTIONS:

1. Preheat oven to 350°F (176.7°C). In a small bowl, sift together flour, salt and baking soda. Set aside.
2. In a large bowl, on medium speed, cream butter, sugar and brown sugar until light and fluffy. Beat in eggs, vanilla extract and mint extract until combined. Reduce mixture speed to low and add flour mixture 1/4 cup at a time. Fold in mint chips, add walnuts if desired.
3. Drop dough using a small cookie scooper (or drop 2 tsps of dough at a time using a regular spoon) onto an ungreased cookie sheet, two inches apart. Bake until golden brown, 10 to 12 minutes. When finished, let cool on cookie racks. Repeat baking with remaining dough.

*Off hand I can't recall where I bought the Guittar mint chips but it was either at Walmart or my local grocery store. The bag is bright green and is only sold between Thanksgiving and Christmas, so stock up as the chips freeze well.)
