Chocolate (Chip) Banana Bread

I modified a normal banana bread recipe a few years back and entered it into my local county fair where I took a blue ribbon for it.



1 1/2 cups all-purpose flour
1-teaspoon baking soda
1/2-teaspoon salt
1 cup white sugar
2 eggs, beaten
1/4-cup butter, melted
3 bananas, mashed
3/4-cup semisweet chocolate chips

*1 tsp banana extract if under ripe bananas are used.

Directions
1. Grease and flour two 7x3 inch loaf pans. Preheat oven to 350 degrees F.

2. In a medium bowl, sift together flour, baking soda, salt and sugar. Mix in slightly beaten eggs, melted butter, chocolate chips and mashed bananas (add banana extract if bananas were under ripe). Stir in nuts if desired. Pour into prepared pans.

3. Bake at 350 degrees F (175 degrees C) for 55 minutes to 1 hour, or until a wooden toothpick inserted in the center comes out clean.
