I must admit that this isn't a trope I care for much, but I'll read pretty much anything of yours. Surprisingly, I did really like the first one, first for the way the young Jack would interpret it, but then for what it implies over the course of his long life.
Brilliant take on number 5 also, that it never appeared because even if he loved, he wouldn't live the rest of his life with them. I really love the line, The end he'd earned would be granted to him within the lifetime of one confused cat. I'm having trouble phrasing this, but I'm caught by the comparison - that what for most people would be joy at discovering their lifemate is, for Jack, joy at knowing the end of his life is finally near.
I love it. They are all clever and lovely in their own ways, but I love 1 and 5 the best I think.
1 for its playfulness and 5 for its melancholy. Both of which I think are always so interestingly and perfectly juxtaposed with each other in your Jack. (And I love your Jack!)
Aw, thank you! Number one is my one true headcanon for Jack. Who does he love? Everybody! And five even ties in with the episodes, because of course now he thinks he's gonna kick it, and he has to tell the Doctor something. If only he can remember what that was...
Fantastic! All the different ways you've found to twist the trope are so inventive! I love the first, with Jack covered all over with thousands of names. The cosmic joke of the fifth is also delightfully appealing. The only person Jack can spend the rest of his life with is the one he meets last before he dies. I could almost feel sorry for him, except it was better that way than losing his soulmate millennia earlier and having to live on with that knowledge.
The romantic in me loves the last one best though, that Jack chooses who is the one for him, just like any normal person.

Number one is all about my firm belief that the person Jack loves best is ALL OF THEM. And number five, yep, you got it in one. :D
