You sound pretty witty or quick-minded, so I was trying to think according to that. Who would be able to bite back with a snarky reply? Pretty much I had it narrowed down to either Deidara or Kankuro.
Deidara is an artist and he takes a lot of pride from his work. He may not be a writer (something I can personally tell), but all arts are somehow connected. There are two ways he could end up responding to a blunt statement. Either just take it and give one back in redemption, or get mad.
On the other hand, Kankuro would probably go along with it. He may act dumb sometimes, but he's pretty darn smart, and it's likely that he could give you your dream date without a shadow of a doubt. Kankuro seems like he could go along with your nature mellowly, and you could keep him tame by making sure he stays in line.
All in all, I'll say Kankuro.

Wow! I'd never even thought of Kankuro! He would probably definitely make a good conversationalist. One would hope. And that kabuki paint of his is rather fetching...

I'm just afraid that Deidara would blow me up if I got on his nerves. I LIKE my ligaments and organs all mushed together in one compact space, thank you.

I would have to go with Kisame for you. I can't honestly say that he's much of a writer, and I can't attest to his creativity, but he's certainly capable of seeing the humor in situations, he's blunt (so you can have open, blunt, tactless conversations without offending each other), and he's unique. (He's blue, for instance.) He can be a little spontaneous, so I wouldn't be too surprised if you set out to get dinner and ended up spending the weekend at the beach once or twice.

He mentions that he likes having Tobi around, so I'm sure that he would be willing to get a mansion in the Alps and raise a bunch of orphans with you when he retires from Bijuu-collecting.

Aah! You're wonderful! Kisame is wonderful! Life in general is now 20% more wonderful!!

You hit a lot of good points, and with all that you've covered, I wouldn't mind him not being a good writer (though he kicks ass at everything else, so why not?).
