You take your chances, wear a condom for a while until you build up enough trust to determine that they don't have anything severly negative, and then you go from there.
Herpes is apparantly horribly common, but it's not really deadly, just annoying. Everything else but AIDS and warts is curable, and the second is pretty obvious. I'm pretty sure the incidence of AIDS is dropping among American heterosexuals. Besides, you can always get a test, and insist that your partner get tested. I know I have (been tested, and asked partners to get tested).
If you're super paranoid about this, you're going to have a difficult time focusing on the important stuff, like meshing personalities, and figuring out if you have similar enough goals and sensibilities to make it a long term relationship. And that's what's really important, not that the other person once needed to complete a three week run of antibiotics.
