Ooooooh, tough one - I haven't actually seen all of every episode of OUaT yet, so I've gathered most of my understanding/love from LJ and tumblr ;)

1) Canon: For me, I'm very interesting/find interesting Emma's Real World growing up/adult past and how it (aside from the magic that influenced it happening) influenced who she is/how she handles things.
2) Head Canon: Along that line, I have head canon I would actually love to see rewritten/shown on the show of how things went for her along the way -> whether heroes are really born or if they make themselves by their own experiences/actions/choices.

1) Canon: Ooooooooh, so hard to pick one for me! :P Hmmmm... How about (considering how her character was/developed later) that Rachel had the 'easiest' way out of the war when her father moved - which essentially was handling her what, at one point, would have been her ideal life in a sense - and 'Let's Do It!'/Warrior Princess Rachel actually wrestled with the decision before discarding that life choice and then never dwelling on it again when everything got really rough.
2) Head Canon: Are you kidding girl?! My head canon has it's own sub head canon as far as this character is concerned lol. ;) For some warm fuzzies, I will always believe that over the years of her parents marriage falling apart Rachel would gather her sisters up and either distract them with pillow forts, stories, hair braiding, walks to the park, etc when their parents were really getting into it with each other.

1) Canon: Hmmmm... I find David's family situation fascinating, and part of that's in how here's this teenage kid that's never really presented as anything other than Bad Guy who very, honestly cares about his family, etc.
2) Head Canon: Some specific event in David's past had a crucial impact on him coming from a 'normal' family that caused him to have the personality he does -> leads to things ending up the way they do within group dynamics, etc.

1) Canon: Tiny little Kaylee being the biggest, baddest mechanic we see/hear of in the verse despite having no formal training is totally kickass. ♥
2) Head Canon: Kaylee bats for either team and nothing will convince me otherwise. ;)
