Huh. I usually stuff the stuffing (hee!) into uncooked peppers and then bake 'em for a little in the oven. I wonder if the flavor would be different that way?

For a less beefy stuffing, try one of the following

* Use rice pilaf (cooked) as a medium, and reduce the amount of beef
* Add hominy corn to the mix
* If ye be bold, replace the beef with ground Italian sausage

Yep, it's fun to experiment with stuffed veggies. Reading this has made me want some stuffed eggplant.

Stuffed green peppers is one of Joe's high fav foods. I've never made them because I hate bell peppers. Siiigh. So he gets them if he sees them on a menu sometimes....
