Huh. I usually stuff the stuffing (hee!) into uncooked peppers and then bake 'em for a little in the oven. I wonder if the flavor would be different that way?
For a less beefy stuffing, try one of the following
* Use rice pilaf (cooked) as a medium, and reduce the amount of beef * Add hominy corn to the mix * If ye be bold, replace the beef with ground Italian sausage

Stuffed green peppers is one of Joe's high fav foods. I've never made them because I hate bell peppers. Siiigh. So he gets them if he sees them on a menu sometimes....
