Holy crap that's impressive. I had no idea they could do that. Are those stock or modified to do that?

Those on the pro or semi-pro racing circuit are all modified to a certain extent. They seal the engine compartment with silicone so that no water gets in there. If any water got in then the clutch would slip. You don't want the clutch to slip because that leads to a lower speed or zero speed, which mean that you immediately sink. There's no flotation. The serious competitors also make their own special mods to the tracks even if the basic production tracks are good enough to give the necessary speed for "skimming" on the water like that.
