I had a beta fish once and I had my grandmother come over to feed it once when my family and I went on a trip. When I came back, the fish was no longer black with purple fins, but orange with red fins. My grandmother, in her infinite wisdom, had fed the poor thing so much food that the water turned a nasty shade of brown. The fish changed colors because it wasn't receiving an adequate amount of oxygen from the water. I cleaned its little tank and it returned to normal.
So: fish changing color=indication you need to clean the water because they can't breathe.
It's kinda like people turning blue when they're being choked.
