Arghh. So after my two week, no-carb phase of South Beach, I decided to go ahead and move normally onto Phase 2, which allows some carbs. End result: I gained 6lbs back this week

Well, transitioning to Phase Two can be tricky. I'm not sure if you are using the recipes from the South Beach books, but I would suspect that it may be a matter of portion control more than the carbs themselves. When I was on Phase Two, I believe that I had the carb meal for dinner. Usually whole grain cous-cous or brown rice and would splurge with the whole grain pasta once a week. I would recommend staying on Phase Two, rather than getting into a trampoline with Phase One. Just review how you are implementing it!
