12 mini quiches
with garlic, spinach, cauliflower, broccoli, mushrooms, and various cheeses.
dough:
3 cups flour
200g butter
1/4th cup water
1 egg
pinch of salt
filling:
1 cup of 1.5% fat buttermilk
125g cheese (cheddar or similar)
50g Parmesan
75g mushrooms
75g cauliflower
75g broccoli
3 cloves of garlic
salt and pepper
for the dough:
1. cut cold butter into smaller pieces and mix it int the flour. it's easy to do and is quick and makes lots of crumbly crumbles.
2. whisk the egg with a fork and add some salt to it and some water and mix it into the crumbles. you might need a bit more water. just enough to have the crumbles turn to dough.
3. refridgerate the dough for at least 30 - 45 min.
for the filling:
1. boil the cauliflower and broccoli for just a bit. you want it to still be crunchy, but starting to get cooked. ditto with the spinach if its fresh, and just defrosted if its frozen.
2. mix all of the filling ingredients together once you drain the cauliflower and broccoli. taste it to make sure its salty enough.
then:
1. butter a muffin tin if you're making em mini, or a bigger dish if you're just making one big one.
2.take the dough, roll it out, you can use a little flour, it isn't annoying dough, it doesn't stick too much. cut circles and places onto the muffin tin.
3. wash the dough in egg and bake for 10 min.
4. then when the dough is starting to cook, take it out and fill with the filling and place it in the oven for another 45 min or so.
the temp I had it on was about 200 degrees celsius...
