What about the significance of the obvious negative connotation of the name? I mean, "Irish Car Bomb" refers to the violence perpetrated by the IRA. Given that, it seems that the drink symbolizes religious and geographic segregation, which cannot be considered diversity at all. Also, I have a hard time seeing how this drink symbolizes "overcom[ing] social, professional, and economic constraints" when it refers to a conflict but not its resolution.
Don't get me wrong, I love carbombs. They're great drinks--poor choice of name aside. I just don't see how they symbolize the things you've enumerated.
