and the pompidou musee d'art moderne is my favorite in the museum gauntlet, but they are all good of course so you can't go wrong.
and of course, montmarte. you have to go to montmarte and sacre coeur, preferably at night. it made me fall in love with the world.

For Oxford, I second the walking along the canals, I second the basic exploring (if you've got only a few days I would recommend a map, though it's more fun without one), & also check out the botanical gardens, near...crap. I think near Magdalene? Anyway, the botanical gardens are prettily wintry this time of year (obviously).
London, yeah, pretty much what he said. Also, St.Martin in the Fields church (near the National Gallery & National Portrait Gallery, both worth a look but if you have to choose go to the Portrait Gallery) is gorgeous & only one of three churches I have really felt spiritual in. Plus they have an amaaaaaing choir, if you happen to be there when they are performing. Also there are cool crypts + bookstore. :D (Unless I am thinking of another church...blegh.)
Also, in London, ride the tube a lot, because it is pretty much the best thing ever.

Search out the Musee de Moyen Age in Paris if you're into like... medieval tapestries (among other stuff). Not for everyone but I really enjoyed it.
