Unless it's chicken or turkey(which I rarely make because I'm not into buying them for myself much anymore) I'm all over the brown stock. More flavor I think and last 2 stocks I made(beef then veal) plus one I will likely make over the weekend are all from local meat.

Not sure why, I just think they taste better(& I feel better drinking them vs white stocks).

Good for eating healthier either way, way to go making your own - diet foods are scary when you really look at what's in them!
