My mother is finally learning how to interlace email responses, rather than delete the whole mail and write a response in letter-like form, with references to my email being typed as 'You mentioned about...' long-hand!

Quote the appropriate bits she's replying to and put the replies beneath.

So:

Blahblahblah Topic A
Blahblahblah Topic B
Blahblahblah Topic C
Blahblahblah Topic D

Would get replied to as:

> Blahblahblah Topic A
Blahblah response to topic A
> Blahblahblah Topic B
Blahblah response to topic B
> Blahblahblah Topic D
Blahblah response to topic D

(C gets snipped because they had nothing to say about it)

As opposed to

Yeah me too...
> Blahblahblah Topic A
> Blahblahblah Topic B
> Blahblahblah Topic C
> Blahblahblah Topic D

Top posting *can* have its uses - I know it's considered standard in a lot of business emails, where people want to maintain the whole thread for reference, don't care about bandwidth, and are too lazy to scroll down - but it is horrible to read unless each response is really short.
